Great Easy Recipes

These great and easy recipes absolutely rock. Whether you workout everyday or are just looking for some tasty snacks.

First up we have the best little energy bites ever and no baking involved.

No-Bake Energy Bites
1 cup (dry) oatmeal
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla

Next up a favorite from the DailCandy’s SuChin Pak

Chickpea-Free Hummus
2 organic zucchinis, chopped
¾ c. raw tahini½ c. fresh lemon juice
¼ c. olive oil
3-4 garlic cloves, chopped
½ tbsp. ground cumin
High-quality sea salt, to taste

1. Blend all ingredients until smooth.
2. Dip celery, red peppers, cucumbers and enjoy.

Then a couple personal addictions of mine….

Arugula, Fig & Blue Cheese Salad
1 pint fresh figs, quartered
2 bags arugula
1/4 cup crumbled blue cheese
3 Tbsp balsamic vinegar
1 tsp. Dijon mustard
3 Tbsp olive oil
Salt and pepper, to taste

Quinoa Stuffed Bell Peppers
1 medium onion, chopped
1 Tbsp olive oil
2 ribs celery, chopped
1 Tbsp ground cumin
2 cloves garlic, minced
1 jalapeno, seeded and chopped
1 (15 oz) can diced tomatoes, drained, liquid reserved
1 (15 oz) can black beans, rinsed, drained
3/4 cup quinoa
1 1/2 cups water
1 cup Trader Joes Pepper Jack cheese
4 large red bell peppers, halved lengthwise, ribs removed
Salt and pepper

Minty Mango Salsa
1 large ripe mango, peeled and diced
1 medium sweet red pepper, diced
1 (4 oz) can chopped green chilis
1/4 cup chopped green onions
1 Tbsp lime juice
2 tsp. minced fresh mint leaves
1/4 tsp. ground ginger
Tortilla chips (optional)
