Pecan and Cranberry To Go Bar Recipe

  • ½ cup buckwheat (soaked, sprouted, dehydrated)
  • 2 cups pecans (soaked, dehydrated)
  • ½ cup coconut chips
  • 1 cup cranberries (naturally sweetened)
  • ½ cup dried pears, sliced
  • ½ cup honey
  • 1 tablespoon coconut oil
  • ¼ teaspoon flaky sea salt
  • 1 ½ teaspoons cinnamon
  • In a food processor, quickly blitz the pecans, buckwheat, coconut, salt, cinnamon and pecans till the nuts have just crumbled. Put the honey in a small bowl, submersed in warm water, so that it liquefies. Transfer the pecan, buckwheat, coconut and spice mixture to a large mixing bowl
    Add the honey, coconut oil and dried fruit. Give it a really good mix. Pat tightly into a square cake tin lined with baking paper. Set in the fridge for a couple of hours.
    Slice into 8 bars

    Gluten Free Energy Bar

  • 3 cups of large flake oats
  • 3 tablespoons of cocoa powder
  • 3 tablespoons of peanut butter
  • 1 tablespoon of hemp hearts
  • 1 tablespoon ground flax seed
  • 1 egg
  • 1 heaping tablespoon of dark chocolate chips
  • 1 tablespoon of protein powder
  • 2 tablespoons of Apple sauce
  • A pinch of magic baking powder

    Mix all ingredients in a bowl and add apple sauce until it’s thick but all mixed thoroughly. Make small sized “cookies” or “bars” and then bake them on a large cookie-sheet at 350 degrees for 12 minutes or so and enjoy.

    CRANBERRY NUT ENERGY BARS – Vegan & Gluten-Free
    2 cups of almonds or mixed nuts (not peanuts)
    1/2 cup of ground flax seed
    1/2 cup of unsweetened flaked coconut
    1/2 cup of whole dates (or 1/3 cup of chopped dates)
    1/2 cup of sugar free dried cranberries
    1/2 cup of almond butter (I made my own)
    1/3 cup of coconut oil
    1/2 cup of sugar free dark chocolate chips/chunks (optional)
    1/2 teaspoon of coarse sea salt (optional)
