Spicy Avocado Soup

mmmmmm!

Here it is!  After posting this pic a while back of a super yummy raw soup I made, many of you requested the recipe.

I use a lot of recipes by Ani Phyo and Mimi Kirk.  This soup is Ani’s creation, although after eating raw for so long, I do tend to change things up by adding or leaving out certain ingredients.  This one is so simple, and takes about 10 minutes or less. You can add more or less water to the consistency you like.  I like mine closer to thick as it feels more hearty.

Spicy Avocado Soup

1 avocado

1 tablespoon of miso (preferable unpasteurized)

1 tablespoon of fresh lime juice (I use a bit more)

1 teaspoon of fresh rosemary

a pinch or more of cayenne, or chipotle powder

1 to 2 cups of filtered water (start with one and test the consistancy you prefer)

1 teaspoon virgin coconut oil (optional)

Blend blend blend!

That’s it.  And you can of course add some finely chopped broccoli or thinly sliced red pepper, or a sprinkle of sesame seeds to top it off, or enjoy it plain!  This serves one, so I usually double up when making for 2.
